New to Appsync and Version 3.5
When I create a SQL FULL Backup /Copy and assign Bronze service plan to it. Where do I find the option on the service plan to enable the transaction Log backups? Even if I create my own service plan name I do not see the option to enable the log backup on the GUI.

I think what you want is in the Create Copy options of the plan:
You should be able to tick the check box to enable the transaction log options.
