Unfortunately, the charting period is only set to max 1 hour.

Yes, but not on the SC directly. You need to connect to the DSM aka "Enterprise Manager" with your DSM Client and than next to Charting option there is "IO Usage" which have Last,3,5,Week,Month and Custom as an option for the period of time you want.
