GUI with multiple hosts
I used to be able to see multiple DataDomain units on the same GUI, is this no longer possible?

Correct, the DDSM (Data Domain System Manager) has a newer layout/look in 5.7 on wards and now can only manage one element/node.
To be fair, for a multiple node management view; DDMC (Data Domain Management Center) is a much more powerful tool.
I genuinely like the DDMC personally.
It's a free VM that you deploy to host the DDMC but does require a zero dollar order via the Dell EMC account team or Dell EMC partner.
