Sleep vs. Hibernate?

Can someone please explain to me when I should use sleep and when I should use hibernate?  I have found some conflicting recommendations within the various help screens in my computer and am not sure of the best plan.  Is it true I shouldn't shut it down at the end of each day? 
 
I use my laptop as my primary computer.  I have 2 babies, so I use it for a few minutes here and there throughout the day.  I do use it every day.

sleep still uses power on the motherboard but low power. hibernate store to a file and shutdown using no pwer to the motherboard. I turn mine off every night. most of the time I hibernate because it starts up faster then booting up from a shutdown. if your going to use it off and on during the day sleep would be good because it will start up a soon a you open the lid it that how you have it set.
