Upgrade with SSD nvme and keep HDD as media storage

I want to upgrade my  Inspiron 3584  with an ssd in which to install Ubuntu and format the hard drive that came from the factory to be used as media storage.

Hard drive contains 3 partitions:
Part 1: ESP 891 MB FAT (EFI System)
Part 2: OS 5.4  MB FAT (Microsoft Reserved)
Part 3: UBUNTU 994 GB Ext4 (Linux file system)

Which of these partitions can I delete without touching Dell Recovery partition that contains a factory image?
