If the hardware you have in hand supports the 7.x code, then sure a downgrade is possible... by reformatting the entire cluster.
Guessing you don't want that, right? So are you talking about just adding some new nodes to a cluster that is already running on the 7.x code? If you attempt to add them via normal methods: front-panel, CLI, etc., then yes the existing cluster will downgrade the new nodes to match. But that's only if the new nodes support the older OS.
Once you're on 8.x code, then rolling back an upgrade is possible; however, it requires a simultaneous cluster reboot, and cannot be done after you've committed/completed the upgrade.
Otherwise, the question would be what's wrong with OneFS8.x that would make you want to downgrade? It's been out for quite a while now and most of the bugs have been worked out already. If you have a specific problem, then I'd suggest you log an SR with Dell EMC Support.

Hi rhyshkhk,
You will have to reimage the cluster in order to go back to 7.2 from 8.0. This will mean that you will lose all data stored on the cluster, so take that into consideration.

It should be noted that if you are already on 8.0 and upgrade to another version of 8.0, that upgrade can be rolled back with out re-imaging. Since you are moving between major versions though, you will need to re-image.
