Dell PowerEdge 410 RAID

We want our RAID to be set up, such that, if one drive we to go down, all the information could switch to the other drive.

Here is the issue… If I have 6TBs of DATA via 4 x 2TB… How do we set up some sort of flag in the system that tells us to stop at 6TBs?

RAID 5 and 6 would do this with 4 disks. RAID 5 gives you single-disk redundancy but 6TB of space; RAID 6 gives you two-disk redundancy but 4TB of space.

How do we set up some sort of flag in the system that tells us to stop at 6TBs?

I don't know what you mean by this.
