ESRS VE 3.08 Update to 3.10 fails

Hello,

I've tried updating our ESRS VE from 3.08 to 3.10 via WebGUI several times now (with redownloading the update to /root/esrsverepo/, but everytime the update process fails and results in an unbootable linux with no accessible root device during init:

I don't want to start fixing it by manually correcting the grub bootloader config through a rescue system, has anyone else encountered this problem and some advice on how to fix this easily?
