When mapping or un-mapping a volume using the vsphere web plugin the option "manually configure LUN identifier to" was removed as there is no more ISCSI support and we can no longer control it.
There's a release note for 1.32.1 stating the following:
When using the VMware plug-in to add volumes, the user documentation erroneously describes the option to manually configure LUN identifiers. This option does not appear in the VMware plug-in.
If it was left by mistake in the user guide, please ignore it - we will correct this for v2.0 docs.
