Eval license for Isilon 7.2 and 7.1
I am trying to take a snapshot of the shares created in Isilon 7.2 and 7.1. Is there an evaluation Sanpshot IQ license available so that I can play around?

Side-Note once you're on OneFS 8.1.x and above, you can simply enable your own eval keys at the CLI with:
isi license add --evaluation SnapShotIQ
as an example. But once you do, you likely cannot renew them without a proper key. I do this frequently in Isilon simulators to test something specific.

Even better, IRC the self-activated demo keys for 8.1 on simulator/virtual nodes are permanent.
(unlike with 8.1 physical nodes)

But the evaluation option is not available with Isilon 7.2 and 7.1. Is there a way to do the similar thing of using evaluation license with 7.2 and 7.1 like how we do for 8.1??

Why does that matter? Use 8.0 / 8.1 instead.
The last release of OneFS 7.2.x is over 12 months old, (7.2.1.6) [rel on 4/24/2017]. EOPS (End of Primary Support) for that release is in just 7 months on 1/31/2019.
The last release of OneFS 7.1.x has already gone EOSL. It's not supported any more. (and not even listed on the support.emc.com Service Life list or spreadsheet.)
