I am not understanding your question.

If you are logged into Ubuntu, running GParted will show you all the partitions on your hard drive.

I do not understand what they are used for?

sda1 is labeled as ESP and mounted in /boot/efi, so it contains some booting program

Usage of sda4 and sda5 is clear, but for what purpose are:

sda2 - FAT32, labeled DIAGS, flagged hidden

sda3 - FAT32, labeled OS, flagged msftdata

Pretty sure a book on Linux and Ubuntu in particular would explain it.

Or do a Google search.
