Dell XPS 9350 and 9360 Dual Monitor plus Ethernet usb-c

Hi,

I've had a look through the posts, but wasn't able to find quite the answer to my specific question.

If I plug this adapter.... (https://www.amazon.co.uk/Cable-Matters-Multiport-Adapter-Ethernet-Schwarz/dp/B0746RM54Y/ref=sr_1_9?keywords=mst+hub&qid=1575385544&s=electronics&sr=1-9)

[if the link didn't work, it is a: Cable Matters Dual Monitor USB C Hub (USB C Dock) with 2x 4K HDMI, 2x USB 2.0, Ethernet, and 60W Charging - Thunderbolt 3 Port Compatible for Windows, Support One External Display with MacBook Pro]

....into the usb-c port of my Dell XPS 13 inch 9360 (or my wife's 9350), will I be able to use two 24 inch external monitors simultaneously in extended screen mode 1080p while also using the Ethernet port?  One monitor has HDMI and DP inputs, while the other monitor only has DP input - I'm guessing I will additionally need an HDMI-to-DP adapter for the monitor that has only the DP port.

Alternatively, I could get one of the simpler usb-c to 2xDP splitters, but then I can't use ethernet, and I'm in the basement at work where our wireless can be spotty.

A closely related but separate question would be whether it would be smarter to just pay some extra money and get one of the docks with more ports.

Thoughts?  Thank you everyone in advance.

-John
