emiling dell would only give you options that were available for the R3 model, nothing more so limited to probably the 480/580M 2-3 years behind ....
as for a laptop yes it need to be a MOBILE GPU since a desktop gpu is bigger then your power brick ...
the biggest prolly validated by dell would be the 480/580M.. but who knows I seen people install the higher 7970M's and 680M's so its known it can be done.. (google is best friend)
unfortunately the R3 M17X was the first to go to a single video card and this was due to heat, I had an R2 M17X and it was a heater with dual 5870's so the M18X came out for dual cards with better cooling, I have a M18X R2 and it still heats up good but dosent overheat like the M17X R2 did ...
As you stated, the only supported video cards on the M17X R3, from Nvidia, are the GTX460M, GTX 560M and the GTX 580M. I've known cases in which customers upgraded to newer models without any problem. I think you wouldn't be missing much if you send an email to request information.
