Automatic means that if you have multiple members in a pool that have different raid types, the array automatically moves data to faster (or slower) raid types based on usage. If you only have 1 member in a pool, or all members are the same drive type and raid type, then this setting doesn't impact anything.
To change it, you go to the volume settings and on the advanced tab you can select a raid preference. If you pick a raid type that doesn't exist in the pool that the volume is in, then the array will use "automatic" till you add a member with that raid type (at which time the volume will be moved to that member).
