Dell PowerEdge R7515. Upgrade all drives to larger drives.

I have a PowerEdge R7515 that I plan to upgrade all drives in the data array to larger drives. The OS is on the BOSS-S1 controller and it will remain as is. The data, in this case Hyper-V VMs are stored on the single virtual disk using RAID-10 using the PERC H740P Mini (Embedded) RAID controller. My mission is to replace the 10 physical disks with significantly larger disks. All VMs and data on the RAID-10 array will be migrated to another server before upgrading the disks. Therefore, loss of data or RAID config will not be a concern for that array.

My question is what is the best procedure to decommission the drives and array as to not cause issues with reconfiguring after upgrading the drive. I've had trouble in the past when I've tried this and get an error saying that there is an old config on the controller. That in turn makes trouble for getting the configuration I want. I guess I'm asking for the best step-by-step procedure for taking down the drives and array so I can start from scratch and not have any lingering config barking at me. Can someone help please?
