Re-creating snapshots with disable snapshots?
I know the manuals say this operation will be fast. But, darn is it virtually instantanious?
Is there a way to verfy that the snapshot is indeed what it is supposed to be after re-creation? Aside from mapping it to a host and using it that is.
Almost makes me want to re-create these from scratch every week, well, not really as the time difference is staggering here.

You can't get any faster than recreating snapshots with disabled snapshots! The repository is already configured so all that needs to be done on the storage array is for it to get ready to accept changes to the source virtual disk.
You just want to ensure that the source virtual disk on the array is in a consistent state prior to the recreation.

I ususally disable them right after my Virtual disk copy from it completes. This past weekend, I left a couple of them online and one ran out of room, I disabled it on Monday to clear the error on the san. On the snapshot that ran out of room? Should I simply re-create it as I normally would? Or should I increase the repository before re-creating it, or should I simply delete it and re-create it from scratch?

Disabling the snapshot once it is no longer needed is the correct approach.
On the snapshot that had run out of room simply disabling it and then re-creating is all you need to do. It does not need to be deleted.
