If the projector is close by the workstation, just plug the cable from the workstation into the projector (VGA-in) and then plug a cable from the projector (VGA-out) into the monitor.
This will give you an exact copy of what is on the projector.
If its DVI-A or DVI-I you can get a cable with DVI on 1 end and VGA (HD-15) on the other. Google "DVI wiki" for a pretty good wikipedia article on DVI. This article shows you what your socket on the video card will look like if it supports analog. If you have DVI-A or DVI-I, Google "DVI VGA cable" for some sources to purchase for about $10.
If your card does support DVI-I or DVI-A you'll need some kind of converter or a new card.
