to my knowledge, this is yet not the case. RPC over HTTPS only makes sense by using User Cache. This component will also be updated at some point in the future (I've heard there is going to come come a patch or SP1) supporting RPC/https. Then also Outlook 2007 is supported for UC.
Outlook should work fine with RPC over HTTPS however a user needs connectivity to the EX server to launch the search plugin (and possibly to resolve shortcuts).
but this is just the clue, that one normally uses RPC over HTTPS only if one is not connected from the company LAN and to my limited knowledge the EX UC front-end server cannot be accessed/resolved.
RPC over HTTPS connects basically to the Exchange front-end servers through a firewall via HTTP. UserCache connects to the EX UserCache front-end servers via HTTP. But currently, one would need to "publish" this web-server to the outside so that the UC can connect to the EX server.
