SQL Server 2008 Standard with new hardware/virtualization

Hey Guys

We purchased (yet to arrive) new equipment.
1 MD3000i with 6x450GB 15K hard drives/5 1TB 7.2K Near-line SATA drives
2 5424 Powerconnect switches
2 R610 Servers with Dual Quad Procs 16GB of memory

I plan on making an ESXi 4.0 USB Key for each of the servers so we can run VMWare. We are going to load up Windows Server 2003 and SQL Server 2008 as a virtual machine on the ESXi environment. This server will have around 15-20 databases with only a few being highly utilized.

What would be the best practice for splitting up all the data for the san within a virtualized environment?
