VMWare initial setup help

Bare with me on this, reading through some documentation and am not quite sure how to config.

We have recently purchased:

1 PowerVault MD3200i iSCSi with 6 x 2 Terabyte drives

2 PowerConnect 6224 Switches

2 PowerEdge R410 Servers

We have virtualized 10 servers on a Dell PowerEdge R710 using ESXi. We have purchased the licensed VMWare VSphere Essentials Plus kit (v5)

We have 3 networks and wish to utilize the High Availability feature and VMotion. 

Can someone point me to some documentation or explain to me the setup of the PowerVault, Switches and PowerEdge servers.

I have read the deployment guide but it is out of date. It seems that configuration 1a and 1b would not fit but 2 doesn't quite clarify.
