How hard is it to switch from embedded MySql to Microsoft SQL? Would it be easier to uninstall and then reinstall the whole product? At this point I'm in the early stages of learning/testing so it would be no big deal.

There is no migration path from embedded MYSQL to Microsoft SQL Server DB. You will have to do a fresh install.
