This is controlled by your data retention settings, which have a very wide range of options.
Check out Management Server - Servers -> Data Management, at the top of the screen, there are some simple global settings. By Default, the data is kept 100 yrs.
Also remember that the actual purging of data is something which occurs at the end of a multi-step process, and is controlled by a schedule called Off-Hours Database Maintenance.
