Hello Patrick,
Hyper-V Server 2012 is not an officially supported platform with the current version of Hyper-V cartridge. Hence it is kind of difficult to determine root cause of the issue your are noticing.

Ok, this is not a production system, I am just testing with Server 2012. If this were 2008 R2 SP1, and you saw the same issue, where might one look?

What collection method are you using? DCOM or WinRM?

Basic or Kerberos authentication? IF Kerberos, then I would suggest try switcing to Basic (use local Administrator account) just to test.
Are there any errors in Hyper-V agent log and/or Foglight Management server logs?
