HID Sensor Collection V2
Vostro 7620
I recently purchased a DELL Vostro 7620. It has something called "HID Sensor Collection V2" in device manager. I have absolutely no idea what it is and what does it do. It is great if someone can explain me what it is so that I can have a better understanding of it.

That is likely a Microsoft driver. HID is Human Interface Device, which is a large group of devices that human users interact with to control the computer. That group includes such items as mice, touchpads, keyboards, joysticks, game controllers, etc.
HID has been present in Windows since at least Windows 98, if my memory is correct. It is required.

A laptop (7390 2-in-1) we had for a while needed a storage upgrade, so we put a new drive in, installed Windows 11 (with oobe\bypassnro), and all was fine. We connect to the Internet, and the keyboard and trackpad stop working; it won't auto-rotate, and this missing driver is showing in the manager.
We go back to a restore point, and everything is fine. Then the network connection brings the updates back, and it's the same issue all over again.
If we close the lid and reopen it, the trackpad and buttons work, but the keyboard remains unresponsive. If we reboot into the BIOS, the keyboard and trackpad work, so it's some crazy driver update that's pushing it.
We turned off driver and Windows updates and tried using SupportAssist or Dell Command Update, but it is the same.
Thankfully, this laptop can run macOS (a hackintosh) and Ubuntu, which is why we went out of our way to get it. If we can't find a resolution, we will use macOS on the storage and Windows in VMware Fusion.
