Hi Heather,
Custom fields for ESX Server host devices are not supported in either CC 6.0 or 6.1. I'm currently checking with Product Management to see if it's on the roadmap for CC 6.2.

As per Product Management, custom fields for ESX Server host devices is on the roadmap for a ControlCenter release post 6.2. At the moment, custom fields are only supported for the top level ESX Server Managed Object in the Console.
