There is no Intel multi display option (which enables both iGPU + dGPU) in 7010 bios.
7010 iGPU has 2x DP + VGA. how many monitors do you want to connect to pc?
some Radeon R7 240 has hdmi, DP, 2x DVI.
that can give you 4 monitors.
If you currently just have the Dell OEM R5 240 then video ports are limited to 2.

It has the built-in vga and also the Radeon card with a dvi and a dp. I'd like to use three screens but seems like I can only use one or the other.

To use the integrated video the discrete video card must be physically removed from the computer. You cannot use them together.

If I remember right, newer Optiplex's have option to run both iGPU and dGPU. Older ones don't.

Definitely not the 7020. I was thinking newer, like along the lines of the 7080, possibly the 7040, and so on. Currently, I don't have an exact way of finding out the exact model #'s.

you can get a full profile R7 250 which has three video ports.
dell XPS 8700 appears to be first model to support simultaneous igpu and dgpu. since 8700 uses 4th gen cpu z87 chipset, one might assume optiplex using similar gen cpu and chipset may also support multidisplay, such as 7020 or newer. since you have 7010, getting a full height gpu may be the only solution.

This will halt with unsupported video configuration.

I picked up a Quadro K1200. It has four mini DisplayPorts and supports 4k. I think it uses 45 watts.

Yes, this can be achieved go into the bios then video and set initial graphics card to the added GPU (usually Nvidia or Amd variants) apply the setting change and reboot. Note use the VGA port of the igp first and have the other monitors off the dedicated GPU.
Did this on my 7020 which has the same bios as the 7010.
