I stumbled on the solution. It has to do with the boot mode setting, i.e., the workstation will not boot with the PERC H730P installed while the boot mode set to UEFI. Reverting to the BIOS mode, and the option to enter the PERC setup appears.
I will continue using the dual SSD's in UEFI boot mode since they are faster and use less power, but I increased the backup frequency lacking redundancy.
