Not willing to try on my own groups (I'm working on some demos at the moment), I pinged one of the experts up at the Nashua location (EqualLogic HQ). According to him, "Yes - you can create and migrate say a single array to a new pool - but not delete the default pool (but you can rename default, however it will still carry extra "default" tag in brackets in GUI.)
One caveat. If you are using Citrix Xen with the Dell/EQL Storage adapter, it currently only supports the "default pool". If that's empty you won't be able to use the Storage Repository adapter.
