I am replacing my old Unity 300F with an Unity 450F and I was wondering if there was anything special I have to do in order to erase the data on my drives. I know that deleting the NAS shares and servers and then the pool will at a hight level delete the data but is that enough to actually scrub the disks? The Pool was created using RAID-5 so if I create a new Pool with a different RAID set will that be enough?

creating a pool wont zero the disks blocks
you would need to create LUNs and overwrite all the data
but even that will not guarantee that every block is overwritten
for example it wont touch the areas reserved for OE and config
the PS service uses special software that the array boots instead of Unity OE
If you have DARE yo could look at kb 487661
