Refresh rate is how fast the screen refreshes, in your case 120 Hz.
FPS is how many frames per second your video card puts out to the monitor, in your case 200-300 FPS.
If you want them synchronized, which is recommended to avoid screen tearing, you would have to enable Vsync for the game you are playing. This will keep the frame rate in sync with the monitor's refresh rate.
This should also lower the load on your video card and generate less heat and stress. I keep mine synched at 60 Hz as that is my monitor's refresh rate, and max out the graphical settings to give me maximum effects and detail. This allows me to run my RTX 3080 at 40 degrees Celsius and keep the frame rate pegged at exactly 59.9 FPS.
