In the past I've advised customers to use their 10GB NICs for in-house traffic and backups and the 1GB NICs for replication over WAN links. Let us know more about your setup and I'm sure some of the users here can offer tons of guidance.
This entirely depends on your setup (like location of DDs) and network setup (how many VLANs and similar). If you can extend this thread with information about your setup it would be easier to suggest something.

This will be a new implementation so I'm trying to gather resources at the moment.
