If using application aware replication (via DD Boost), nothing - it is all handled automatically. If not, you need to create replication context and initiate it (can be done via GUI).
Not sure what best bandwidth means - the fastest? Replication speed depends on couple of things like how busy DD is and how much data there is, how small and unique data is and so on. Bandwidth is usually sized based also on multiple inputs and EMC has nice tool for sizing. You can ask your EMC contact for that and they will collect data and get you figures.

offsite in your case is remote DD or really offsite like tape volume which later on moved away from premisses?
