Which Linux is a subjective question.
I personally like Ubuntu a lot, but there are other good distros out there. Here's a read:

Partition size is up to you. Linux is a good bit smaller than Windows, I'd recommend at least 20GB but one could get away with a smaller partition. It really depends on what you want to do with the installation.
A guide to dual boot the two:
http://apcmag.com/how_to_dual_boot_windows_xp_and_linux_xp_installed_first.htm
That outlines how to dual boot XP and Ubuntu 8.04 but the process would be pretty similar for any other distro.

You may want to reconsider your dual-boot scenario. If you don't actually need both OSes to run on the bare metal, you should think about running one OS or the other as a virtual machine. This would let you run programs from each side-by-side without a reboot, and lets you run the certified OS (Windows) on the metal while running Linux in a standardized environment (since the E-series is not certified for Linux yet -- meaning probably that not all the drivers are out yet.)
I've run dual-boot for many years but the E6500 I just ordered will be the first machine in a while that *doesn't* -- I'll be going strictly with VMs. That was one of the deciding factors for me -- the 6500 can support enough RAM for several VMs at once.
Look into running VMware Server -- it's free. There are other virtualization options as well, but IMHO VMware seems to have the most efficient memory use and best performance.
