Hi Everyone, 

I have a dell optiplex 5070MT with an I7 fitted, I'd like to upgrade the cooler if possible from the current 'all aluminium' bolt down type to one with some copper to keep the temps down a little. 

is there a list of applicable SKUs which can work?

one option is For DELL XPS 8940 Dell G5 5090 CPU Cooler fan with heatsink 0VWD01 MWXCG

It is for lga1200 socket which is interchangeable with cooler for lga1151 in optiplex 5070.

Caveat: this is a Dell premium tower cooler.  make sure it can fit in 5070 mt case before purchase.  xps8940 case is wider than optiplex.

xps 8940 case width 169 mm

optiplex 5070 mt case width 154 mm.

another option is Dell Optiplex XE2 SFF Desktop HighHeat Processor Heatsink Fan Assembly J9g15

XE2 has lga1150 interchangeable w lga1151.  heatsink has a copper core.  You may extract the heatsink and swap with your aluminum heatsink while keeping your cpu fan.
