Expanding Virtual Disk in RAID 5 array.

My current set up is as follows:
2 * 154GB SATA II drives in RAID 1 C: (OS)
8 * 500GB SATA II drives in RAID 5 D: (DATA)
 
My current plan is to leave this all running for quite some time then eventually when 1TB SATA II drives roll out next year gradually replace each 500GB drive in the 8 drive array and rebuild.
 
Now I understand that when I insert the first 1TB drive only 500GB is going to be used because that's the nature of mixed size drives in RAID 5 arrays.
 
But what I'm wondering is after the week of replacing each 500GB with a 1TB drive and rebuilding after each is replaced will I be able to expand the array from the 3.3TB usable to the full capacity of the new 8TB drive array?
 
I tested this out by creating a RAID 5 array as follows:
1 * 160GB SATA II and 2 * 500GB SATA II
 
Removed 160GB SATA II
 
Inserted 3rd 500GB SATA II
 
Rebuilt
 
Now when I go to reconfigure I only see the option to go to RAID 0. Am I missing something? Shouldn't I be able to expand this Virtual Disk to the full capacity of the 3 500GB drives? The controller certainly sees the full capacity. I just don't see a way to expand it that way though.
