It would seem from a very quick search that the only difference is the ST3300657SS is a 6Gbps drive (SATA3) and the ST3300655SS is a 3Gbps drive (SATA2).  This should not be a problem as long as you get a drive certified for use on a PERC 5/6 controller (I.e. Dell co-branded).  If you get a generic/retail Seagate-branded-only drive, you risk the health and performance of your array.

Dell co-branded Seagate ST3300657SS:

I'm not necessarily recommending you purchase from these locations ... simply to illustrate that fact that the same Seagate model is available with a specially-tuned firmware loaded on them that "certifies" the drives for use on a PERC controller.

As for the replacement ... you should force the drive offline before removing it (OMSA, Storage, PERC, Connector/Enclosure, Physical Drives, Offline from dropdown), or else you may end up with the new drive showing predictive failure (at least until you reboot).  If you get a "new" drive, it may rebuild automatically ... if not, you can assign it as a hot-spare (either in Physical Disks above, or in OMSA, Storage, Virtual Disks, Assign from dropdown).  If the drive is "used" or refurbished, it will probably show up as  Foreign when you put it in ... simply clear the foreign config (OMSA, Storage, PERC, Information/Configuration (link at top of page), Foreign Config/Clear from dropdown), then assign it as a hot-spare.
