The PERC H700 can use disks larger than 2TB. The R415 maximum capacity is 8TB+ (the only reason it lists 8TB is because that was the maximum based on the largest disks Dell tested/validated at the time of the writing you found). Current spec sheet shows 12TB:

The problem you are running into is with the OS:

  • Windows cannot use a disk larger than 2TB unless it has been converted to GPT.
  • Windows cannot boot to a GPT disk unless installed on a UEFI-enabled system.

So, you can either "slice" the RAID by creating multiple arrays across the disks, with the boot "disk" smaller than 2TB, or you need to enable UEFI and reinstall the OS in that mode (GPT conversion is data-destructive).
