If you have the H700 installed it will support a Raid 5 level Virtual Disk. Where I think you are getting confused is that the Perc 5 and Perc 6 are not Raid levels, but in fact are earlier Raid controllers, like the H700.
Each of the controllers support having multiple Virtual Disks, so you would certainly be able to separate your OS and your Data to two different Virtual Disks.
Lastly, with the H700 you can do a Raid Level Migration and roll the Raid 1 up to the Raid 5 without deleting and recreating the Virtual Disk. You can simply add the new hard drives, then do a Reconfigure to start the conversion to Raid 5.
The issue is likely due to not having a 3rd drive of either type. As 3 drives is the required minimum for a Raid 5. So it isn't giving you the option as you have 2 pairs.
We can only guarantee that our drives will function. That doesn't mean that other SSD manufacturers won't work, just that we don't test them, so we can't confirm if they will work or not.
Would you clarify what region are you in, as well as the requirements you have for the drive and I can get you some part numbers.

Hi again Chris,
Think I marked this thread as answer too early
Now I know what confused me.
I have the same Perc 700 C/card and software Utility V as the video on you YouTube shows,

But I do not have the choice when I select the raid level to choose anything but Raid 0 or 1.
Is this because size of drives? I have two SAS Drives of 136g each and two SSD of 138.25g each.
Or is the reason, some configuration in Bios or elsewhere.
Said I was a newbie.

Thanks again Chris, that makes sense.
May I check with you to make sure I am right, can any 2.5 SSDrive work with the R610 or SAS or do they have to be certain ones.
Looking at two like this to upgrade storage as 136gb drives, doesn't allow much room to install Win 2012 etc on.
Dell Savvio 2.5", 300Gb 15K 6GBps SAS hard drives in PowerEdge trays, 0H8DVC
Do they have to be Del or can they be HP for example as long as they are 2.5 size etc?
I did notice Del has drives as spare parts but I think that is US site.

Currently have 2 SAS 136gb and 2 SSD 138gb drives. All Dell.
