your ans are as :-

1. Yes.(can also increase the disk cap).

2. SSDs are sufficient as per the Req.

3. controller (RAID Controller S140)

 

My personal suggestion is to get in touch with dell sales rep to get better clarity and the best hardware for your needs.

A S140 is a Software based Controller and its not well support by vSphere ESXi.  If you thinking of a HW Raid and ESXi you should take a look for a H755N.

With your requirements a RAID 10 NVMe sounds oversized..... RAID6  and a bunch of RI SATA/SAS 1.92TB SSD will save a lot if $$$. But as always it depends on your needs and budget.

Dont mix M.2 and U.2  The later is the 2.5" oriented design which you will find in Server from Dell,HPE because they are changable without opening the server chassis compared to the M.2 format which will used on your Playstation, Laptop or Office/Gamer PC.
