I am not seeing any issues in directly updating to the version you mentioned. You can first update iDRAC followed by NIC and BIOS.
Note : In support site I could find 2.12.1 as latest for BIOS. For NIC I could not find 19.0.12 for X540 and latest is 19.5.12. I assume you are going to update to 19.5.12.

@pintot You can directly update these components as there is no major gap between current and targeted version. Can you share the server model and network card details so that we can check exact details.
There is no hard rule on upgrade path. It is not recommended to directly update from very old FW to latest FW as it may result in unforeseen behavior. I would recommend to choose one FW from each year based on release date and perform staged update. If there are multiple component of the server which have old firmware level, it is recommended to perform stage update of all components in parallel rather than updating one component to latest by stage update then moving to another component.

For now, we will get to the target versions directly. For future upgrades, what documentation do we refer to, to understand the upgrade path?
