About which linux to use I like Mandrake (www.mandrakelinux.com) I think it can
do all you want, and for sure much better than any windows version.
Some people like to use redhat (www.redhat.com)
or also SuSe is a good option (www.suse.com)
I think you can find all the info you want in those websites.
About the configuration it can be really easy and really difficult it
depends about how much you want to configure and how deep.
To get a great performance I will use GENTOO (www.gentoo.org) its a great
distribution but you will have to compile all the operative system =)
but its going to be like all customized in a perfect way for you.
hope this helps..

Linux will work wonderfully in a network environment, and thrives on multiple processors!
You shouldn't have any problems getting it to be a server for your Windows XP machines either.
I have a PowerEdge, which runs RedHat, and serves about 30 comptuers. It has 2 HyperThreading processors.
