There is no setting to "enable/disable" 64-bit, and every 2850 shipped 64-bit capable.  If it won't "boot" to 64-bit media, I would say it is a problem with the media (bad disk, ISO, etc.) and not a problem with it being 64-bit.  Keep in mind that 2008R2 is DVD ONLY, so make sure you have a DVD drive.  What OS is the 32-bit disk (as 2008R2 doesn't come in 32-bit)?  If you do indeed have a DVD drive and it still won't boot to it, I would:

  • Re-burn the ISO to DVD, even try using a different burning software like ISORecorder, CDBurnerXP, or the built-in Windows 7 utlity (right-click).  (You should NOT be able to see the ISO on your DVD when browsing it - you should see the actual installation files/folders.)
  • Re-download the ISO, if downloaded from Microsoft.

If you don't have a DVD drive, you can install easily using USB on the 2850 (this will work for all Vista-family and later OS's):
