94J5V is the correct part number of 8 X 2.5 BP for R640. You need to have SAS, Power and Signal cable to connect the BP to the server. SAS cable part number depend on whether you want to connect backplane to onboard SATA, Min PERC or Adapter PERC card.
Below link have the details on various cable routing option for R640. Figure 5,6 and 9 are for 8 X 2.5 backplane.
Thank you for all your assistance. Is there a resource you can put me in contact with to order these parts? I have contacted multiple Dell sales representatives and have come up empty handed trying to order these parts. I also cannot find all of the cables online through 3rd party vendors either.

Note : You need to ensure your chassis support 8X2.5 backplane.
