VMware Latency Spikes

A few weeks ago, one of our VM hosts started showing disk latency spikes every 5 minutes upwards of 800ms. 

We updated the host with all the latest VMware patches, and now the spikes are happening every 30 minutes, and only spiking to 100ms of latency.

VMware swears it's a hardware issue and we need to look at our diagnostic information on the Unity. There is only 1 VM currently running on this specific host with the latency spikes. There are 50 other VM's on 2 other hosts that aren't showing spikes, and they are all using the same datastore on the same physical Unity server. This suggests to me that it isn't a hardware issue, but I have certainly been wrong before.

Has anyone else ever seen anything like this? If so, any input is appreciated.
