This is not really a question that can or should be answered in general terms.
Every case will be different.
Arrays boot time or shutdown will depend on how large the setup is and how busy the array is.
If you have an array with 5 LUNs and not a lot of complexity (snaps, replication, etc etc), the times will be shorter.
If you have an array with many LUNs, Filesystems, vVOLs, SNAPs, replication, etc etc, it may be a while.
The question is too generic and cannot be answered.
If you have any specific scenarios you need input on from our side, let us know.

I think it's not possible to estimate something like this accurately either way.
If you are talking about SP reboots, they are normally around 10 - 15 minutes each.
To shutdown the system completely could be anywhere between 5 to 15 minutes, i'd say. Same to boot up.

Keep in mind that SP reboot time doesn’t affect client availability
LUNs and file systems get served by the other SP very quickly

Keep in mind that Unity will save (vault) all outstanding data to its internal vault SSD using its own builtin battery.

After removing all hosts and connections, and be sure there's no IO coming to Unity system, It will took around 10 to 20 Min. You can confirm by checking LEDs; two Power Supplies LEDs are solid green and amber, the SP Status Fault LEDs are solid amber, the network management port LEDs are on, and all other SP LEDs are off.
