Well, probably the best way is not to virutualize ECC. You can simiplely select to upgrade your ECC to propshere. EMC Prosphere is offered as vApp consisted of 3 VMs. You can easily deploy them on your VMware, although the initial configuration might take some time, the new agentless discovery is my favorite new feature. You can check the following document for more information.
Prosphere is yet to offer the feature set you get in ECC. I have my ECC infrastructure virtualized and i have not had any issues at all, granted all my ECC components reside on two servers.
On gotcha or item not to breeze over is that Windows 2008 User Account Control (UAC) needs to be disabled before installing the ControlCenter Console. This is in the planning guide pg 256. As Windows 7 and W2008 have the same code base the same applies for 2008 even though not stipulated :-)
That's one I can remember. If I think of any more I will post it.
