What are my options for upgrading the CPU in my PC? I have the Area-51 R5 (2018) with a i7-7820X (liquid cooling), 850w PSU.

Dell will not have this part in stock. You would have to find a reseller.

Hmm.
Well, an (Asetek made) Alienware cooler for the Aurora-R3, would not directly install in an Area51-R1, because the MIO-Board (and it's daughter boards) are slightly different cable-pin config.
According to my notes, the best liquid-cooler for Aurora-R1, R2, R3, and R4 is:
