I have found that with the new v6.1 proxies the network settings can be stored in the VM settings in vSphere and that any attempt to change them onthe proxy gets overwritten at boot by the vSphere settings. The proxy has to be powered down but the settings can be changed here:

Hello,
You can run a script named firstboot.sh located at /usr/local/avamar/etc, the script firstboot.sh will restart the proxy configuration wizard.

I found the script in /usr/local/avamarclients/etc it was a registerclient.sh script.
