The last step then is to create a dataset with "Windows Exchange Message" as plug-in?

Yes, For creating Schedule backup please create a database with pluing "Windows Exchange Message" select the mailbox which needs to be backedup.

Incase if you get error message MAPI_E_CALLED_FAILED in your backup jobs, please refer Microsoft KB Article 830829 & 830836
