Consistency with SANCopy and Two Source LUNs

My host has two luns and I want to incremental sancopy both of them from one CX3-20 to another in such a way that they are consistent.

Can I?

Create a SANCopy session for each lun, mark them simultaneously, and start my session.

Is this what is referred to as "consistent split"?

pretty much, as soon as you mark them ..it's like creating a point in time snapshot, from this point on ..any new write will go to RLP pool, so your data will remain consistent. It's used when somebody wants to mark LUNs at say 6pm ..but start transferring data at 10pm. Your destination LUNs will have the 6pm copy.

Caution is needed here - for Incremental SAN Copy sessions, there is not an ability to "mark them simultaneously". That is, the array provides the capability to start/stop SnapView or MirrorView operations across a set of LUNs via the use of Consistency Groups, however this capability does not extend into Incremental SAN Copy. Possible ways to accomplish this are either to enforce consistency at the host level (e.g. quiesce the application) or to create SnapView clones in a consistent manner, fracture them, and use them as the source of the SAN Copy operations. I know this is not the answer you want to hear, but you will not be able to enforce consistency across multiple LUNs in the context of Incremental SAN Copy.
